Torching the Sugar on top of a Creme Brûlée
I've already told you that cracking the top of a creme brûlée is one of my reasons to be happy (Reason #235 to be exact). But I only recently had the opportunity to witness the making of thisone of my top five desserts—in person, and to use the torch myself.
Scorching the sugar on top is a VERY satisfying activity. Who doesn't love to play with fire?
